Guess its the usual plug/injector fuel pressure tests to start with.

Guess if one pipe red hot and running rough you have a fuel issue to that pot.
Temp sender on the air cooled twins is not going to be very accurate and is engine block not individual pots.

Maybe a faulty sensor has put it into a ‘limp’ mode?

Was it actually hot, or just hot pipes? Maybe running lean for some reason
